HACCP CONCEPT DISCUSSED: USE DISPOSABLE PAPER TOWELS TO DRY HANDS INSTEAD OF CLOTH TOWELS
WALK-IN COOLER WAS READING A LITTLE HIGH THIS MORNING WHEN CHECKED. WAS TOLD THAT THE COOLER DOOR WAS OPEN FOR SOMETIME PRIOR TO WHEN I ARRIVED. AFTER CLOSING IT FOR A WHILE TEMP WENT DOWN ONLY ONE DEGREE. I SUGGESTED THAT THEY MOVE THE POTENTIALLY HAZARDOUS FOODS, (MILK, EGGS, BACON, MEAT) TO ANOTHER COOLER OR PUT ON ICE JUST INCASE THE COOLER IS MALFUNCTIONING. TEMP WAS 47-45.
